How it's used
Liver sausage is a quintessential winter ingredient in Hong Kong, often paired with regular lap cheong in claypot rice. It has a distinct, earthy, and slightly metallic flavor profile that is much richer than standard pork sausage. You will rarely see it sold alone; it is almost always bundled in pairs, which is why it is frequently referred to as a pair of sausages.

Common mistake
Do not confuse it with standard pork sausage, which is just called 臘腸. While both are preserved meats, the addition of liver gives this variety a much stronger taste that some people find polarizing.
